I think I had that book as a kid! Or maybe a collection of strips that the drawing and story was culled from? For some reason, I'm remembering it as a graphic novel/album... and in black-and-white.
I'll have to go digging through my library to see what I might find. I can't imagine getting rid of anything Hal Foster, even a kid's book.
Wonderful scans. I'm so glad you didn't try to make the the paper colour bright white. No designer of Foster's generation expected their work to be printed on bright white paper and most drawing doesn't look as good on it.

In black and white? Then, it is "The Medieval Castle", published in 1957 by Hastings House. This "Young Knight" is an adaptation of it.
Manuel: Yep! The edition I have is in Danish and from 1978 ("Ridderborgen"), and it's a full graphic novel.
